The most frequent cause of an engine running hot is simply a lack of coolant due to a leak in a hose, the radiator, or the water pump.
The thermostat regulates engine temperature. If it fails in the closed position, hot coolant cannot flow to the radiator to be cooled.
If the cooling system was recently drained and refilled without proper bleeding, trapped air pockets will block coolant flow and cause sudden temperature spikes.
The cooling fan pulls air through the radiator at low speeds. If the fan motor, relay, or fan clutch fails, the vehicle will overheat in traffic but may cool down at highway speeds.
The water pump circulates coolant through the engine. If the internal impeller degrades or the drive belt slips, coolant stops flowing entirely.
