The MAF sensor measures incoming air. If the sensor wire is dirty, it underestimates the sudden rush of air when you press the gas, causing the engine to run lean and hesitate.
A leak in the intake system allows unmetered air into the engine, throwing off the air/fuel mixture. This is frequently caused by a loose hose clamp or disconnected PCV hose after recent under-hood maintenance.
